acai superfood bars

Prepping meals is one the most important things when it comes to eating healthy. These acai bars are full of goodness, from nuts and seeds to the amazing acai. The acai berry is full of antioxidants, plus great for your immune system and energy levels. Make these on a Sunday afternoon and have an easy breakfast ready for the rest of the week!

 

You will need:

1 cup almonds

1 and 1/2 cup cashews

3 tablespoons peanut butter (or any nut butter you like!) 

2 teaspoons of cocoa (or chocolate flavoured whey for added protein)

4 teaspoons acai

1 cups desiccated coconut

2 cups frozen berries (we used mixed berries)

2 teaspoons agave (or honey)

How you do it:

1. Base: Mix 2 teaspoons of acai, 1 cup almonds, 1 cup cashews, 2 tablespoons of peanut butter, 2 teaspoons of cocoa, 1/2 cup of desiccated coconut in a food processor until sticky. Then push in a baking tray which is lined with baking paper. Leave in the freezer for 20 minutes.
2. Topping: Mix 2 teaspoons of acai, 2 cups frozen berries, 2 teaspoons agave, 1/2 cup desiccated coconut, 1 teaspoons of peanut butter in a food processor until thick. layer on top of the base, sprinkle with some seeds and leave to set. 

3. After about an hour you can take it out and cut it up. Leave some in the freezer and some in the fridge for easy, healthy snacking!
