baked eggs and sweet potato 

There are lots of baked egg recipes around but this is our very own version and it's DELICIOUS. You can have this for breakfast, lunch or dinner! Sweet potato makes a great post-workout snack as they are a complex carb which can help to restore glycogen level.


You will need:

One medium sweet potato 
1/2 medium red pepper 
2 eggs 
Feta or your preferred cheese
4 spring onions 
Chorizo (without for veggie option) 
1 teaspoon coconut oil


How you do it:

1. Peal the skin off the sweet potato (don't use it) cut it in half and peal the rest into a bowl, finely chop the pepper and the onions and add them.
2. Add coconut oil to a pan and cook the veg on medium heat for around 10 minutes. Season with salt and pepper.
3. Make two spaces for the eggs and crack them in. Add the chorizo and place the pan straight in the oven under the grill on 180 for around 10 mins (handle sticking out) Keep checking. The egg should be cooked and the sweet potato starting to go brown and some parts crispy.
4. It should slide out and onto a plate in one piece, add your cheese! Or if you add your cheese a couple of minutes before taking it out if you want it to be melted.
