baked eggs and avocado
Baked eggs and avocado - a popular choice on our menu 🍳 These make the best breakfast or lunch, quick and easy to make too!
You will need:
1/2 medium sweet potato
1 tin tomato
1 fresh chilli
How you do it:
1. Chop sweet potato into cubes and cook in a pan with coconut oil
2. Add tinned tomato, fresh chilli, chorizo and whatever else you fancy. Cook until the sweet potato starts to turn soft
3. Crack the eggs on top of the mix in the pan and cook in the oven on 200 degrees until the egg is cooked as you like it
4. Add avocado, pepper, salt, mozzarella/feta and chives.
