zucchini pesto noodles
These noodles can be served raw, which makes it a really quick meal to prepare, perfect for a summer dish. Heat it up in the winter months!
You will need:
1 A spiraliser (you can hand held ones for about £5)
6ish cherry tomatoes
3 teaspoons of green pesto
Some fresh basil leaves
Otional: A sprinkle of pine nuts
How you do it:
1.Spiralise the courgettes, then cut them a little so they arent too long (although they might look fun now, it wouldn't be too easy to eat!)
2. Mix in the pesto, tomato, basil and pine nuts
3. Either servie cold or heat it in a little oil in a pan
