Healthy starter idea for a dinner party

If your are having some friends over and dont want to spend too much time in the kitchen, this is the perfect starter for you to make! It is healthy and quick to make, and also vegetarian if you have any veggies over for dinner!

Prep time - 15 mins

Cook time - 10 mins

Halloumi and mixed veg kebabs

Serves 4

2 x halloumi

2 x yellow pepper

2 x courgette

1 x pack of baby tomato

1 x lemon

1 x fresh chilli

Olive oil

Skewers

Creamy Avocado dip and flat bread

2 x avocado

1 x Jar jalapenos

1 x greek yogurt

1 x lime

1 x garlic clove

1 x tsp cumin

Pinch salt and pepper

Brown flat bread or some crisp bread

Method

Start by preparing the halloumi and veg for the kebab by chopping in bite size chunks. Add all in a large mixing bowl. Pour in some olive oil so the veg is lightly covered. Squeeze in the lemon. Deseed and finely chop the chilli. Add in the bowl. Mix the veg around so all is covered in the oil. Start adding the veg and halloumi on the skewers. Grill for approx 10 mins, or when you see the halloumi start to go golden.

While the kebabs are cooking make the avocado dip. Blend all the ingredients until thick and creamy. Easy!

Toast the flat bread and serve.

For a low calorie drink with your dinner have a bottle of cava instead of wine, which is only 90 calories per glass!
