Cinnamon and chocolate oat cakes
These oat cakes are easy to make and taste amazing, you wouldn't believe they are a really healthy dessert, or quick snack! This is a no bake recipe, so you really cant go wrong. Just blend, freeze and enjoy your healthy cake!
What you'll need: Bottom 1/2 cup dates 3/4 cups almond butter 1/4 cup honey 1 and 1/2 cups oats 1/2 raisins 2 teaspoons cinnamon
Chocolate top 3 heaped tablespoons cocoa 3 tablespoons honey 1 table spoon rice flour 2 tablespoons almond butter 1/4 cup almond milk 1 table spoon desiccated coconut
How you do it: 1. Start by blitzing the oats in the blender for a coupe of seconds, be careful not to turn them into flour! Put into a bowl and add the cinnamon. 2. Soak the dates in boiling water for 10 minutes then add them to the blender with the almond butter, honey and 3 tablespoons of the water they were soaking in. Blitz until smooth. 3. Add the mixture to the oats and stir, then add in the raisins. 4. Add too your cake moulds only half way up and flatten the top. (I use silicone ones) put them on a plate together and into the freezer. 5. While they are in the freezer add all the ingredients into a blender for the chocolate and blend. Take the cakes out the freezer and pour on the chocolate top. 6. Freeze for an hour so the chocolate hardens and you can take them out the moulds and store them in the fridge! (After you've eaten one....or three)
