Healthy vanilla fudge ice cream!

It's nearly summer, so we are all watching our figures but also craving creamy, cold ice cream! This recipe should do the trick. The best thing about it, its a very simple, healthy dessert to make. It requires no baking at all, simply blend ingredients, freeze and assemble! This makes a great vegan dessert, which also has protein in it, from the chickpeas. Enjoy!
Vanilla fudge ice cream
You will need:
2 frozen bananas (freeze a few hours before)
Vanilla extract
Almond milk
1 can of chickpeas
10 dates
Peanut butter
Dark choc chips
How you do it:
For the chocolate fudge balls:
In a food processor or blender put the drained chickpeas, the dates, 1/3 cup almond milk and 1/3 cup peanut butter and a dash of vanilla extract. Blend, add the choc chips, form into balls and freeze. Leave to freeze for approx 3 hours.
For the ice cream:
Blend the two frozen bananas with a splash of almond milk and 3 of the frozen fudge balls.
Put the mixture in a bowl and top with as many of the fudge balls as you like!
Skinny tip: these fudge balls are great to keep in the freezer as a quick snack
