Skinny Kitchen brownie recipe!


Our sweet potato brownies at TSK Ibiza just keep on getting better! They are so good right now we have decided to share the recipe with our lovely customers - you are welcome!

You will need:

2 medium sized sweet potatoes

14 medjool dates

2/3 cup brown rice flour

2/3 cup ground almonds

7 tablespoons of cocoa powder

4 tablespoons of honey

Pinch of salt

200g dark chocolate bar (above 75% cacao)

How you do it:

1.Pre heat the oven to 180 degrees.

2. Peel the sweet potatoes, cut them into chunks and boil them until they become really soft, add the dates and blend in a food processor (or a hand blender) until the mixture is thick and creamy.

3. Mix all the other ingredients into a separate bowl, add this to the sweet potato and date mix.

4. Pour the mix into a baking tray lined with baking paper and cook in the oven for 20-25 minutes. Leave to cool for 10 minutes to allow it to stick together.

5. Melt the dark chocolate and either poor it over the top and put into the fridge for one hour to set or use to drizzle over the brownie as you serve. Make it pretty with a strawberry and some desiccated coconut.
