Satay Chicken Kebabs

You will need: (serves 2)

Peanut sauce:

2 tablespoons peanut butter

1 tablespoon soy sauce

1 tablespoon hot water

Fresh lime juice

Crushed chillies

Low fat yogurt

Fresh lime juice

Crushed chillies

2 chicken breasts

A few long skewers

How to do it:

1. Make the marinade by mixing the ingredients together. Cut the chicken into strips and leave in the marinade for a few hours.

2. Soak the wooden skewers in water for 30 mins (this stops them burning under the grill)

3. To make the peanut sauce simply heat all the sauce ingredients on the hob for approx 5 min

4. Take the chicken from the marinade, thread onto the skewer and grill for about 15-20mins.

5. Serve with the peanut sauce in a side dish

Why this starter?

Getting protein after a workout is important in order for muscles to start repairing themselves. This starter is high in protein from the grilled chicken and peanut sauce, while being low in carbs and fat.

Sirloin steak with sweet potato mash and roasted vine tomato

You will need: (serves 2)

2 x Steak (best from your local butcher)

1 large sweet potato

Vine tomatoes

How to do it:

1. Peel the sweet potato and boil for 20-25mins

2. Heat the oven to 180 and put the tomatoes in

3. Bring your steak to room temperature and season with salt and pepper

4. Grill your steak for approx 5mins each side (cooking will vary depending on preference to rare/medium etc and thickness of steak)

5. Mash the sweet potato adding a little salt and pepper (no butter needed)

6. Serve!

Why this main?

After a workout your body’s glycogen levels drop. Sweet potato is a complex carb which helps restore glycogen levels.
