National sweet potato day...

Today is national sweet potato day, we have no idea who thinks these days up but we love sweet potato so we aren't complaining! If you are a health conscious person you will more than likely already be aware that ditching the white potato in favour of the sweet potato does offer health benefits. Check out this blog we wrote which gives a comparison of the macros. We know we aren't telling you anything new here, many of us have been eating sweet potato for years. So on national sweet potato day why not try something new? Forget fries or mash and give these sweet potato pancakes a go!

Sweet potato pancakes topped with poached egg

What you'll need: 2 eggs (one to poach) 2 small sweet potatoes Coconut oil 20grams ground almonds 30 grams spelt flour

How to do it: 1. Peal and grate the sweet potato, add to a bowl and add salt and pepper 2. Then add the egg, ground almonds and the flour. 3. Heat up some coconut oil in a pan and shape the mixture into two large pancakes. 4. Cook for around 2 minutes on each side and then put them into the oven for 15 -20 minutes on 180 5. During the last 2 minutes, poach your egg! Season with salt and pepper.

Skinny tip: you can use alternative flours, almond flour can be used instead of the spelt flour and ground almonds.
