homemade protein bars

Meal prep is key to success when eating healthy. Planning ahead and making a batch of protein bars to eat throughout the week will ensure you have a healthy snack or breakfast ready whenever you need it! These bars are made mainly of sunflower seeds, which are a good source of healthy fats, protein and vitamin E, to name a few!

You will need:

1 cup sunflower  seeds

1/2 cup flax seeds

2 tablespoons of peanut butter

1 scoop of whey protein (we used vanilla)

1/2 cup oats

1 teaspoon of vanilla essence

2 tablespoons of honey or agave

2 tablespoon of melted coconut oil

2 tablespoons of coconut sugar (optional)

Dark chocolate for topping (optional - they taste great without it too!)

How you do it:


1. Add all of the above ingredients apart from the dark chocolate to a food processor.

2. The mixture should roll into balls and stick together, if not add a little more peanut butter or honey

3. Line a baking dish with baking paper and firmly press the mixture into the dish, leave in the fridge for a while to set. You can eat it like this or melt some dark chocolate as a topping.

4. If you add melted dark chocolcate just pour it over and scatter it with any nuts and seeds you have and leave to set for an hour.
